Quick and Easy Healthy Christmas Night Meals for Busy Schedules

On this 20th day of Countdown to Christmas, I gave my busy self a simple and delicious family favourite. This week has been busy with medical appointments every day. Tomorrow begins a month-long schedule free of clinic, hospital, and doctor appointments. Tonight, I made a simple and healthy meal: salad and sweet potatoes with tahini sauce. This recipe calls for simple ingredients and steps to give sweet potatoes a delicious new flavour.


My introduction to tahini came through one of my favourite food websites: The Mediterranean Dish with Suzy Karadsheh. Tahini, a Middle Eastern spice commonly used in regional dishes, is a healthy sauce made by grinding roasted, shelled sesame seeds into a creamy sauce. This sauce is a rich source of monounsaturated and polyunsaturated fats, the healthy fats that support heart health. It's also packed with calcium and magnesium. In this recipe, we pair tahini with maple syrup or honey, creating a nutritious and delicious topping for roasted sweet potatoes.
