On this 20th day of Countdown to Christmas, I gave my busy self: a simple and delicious family favourite. This week has been busy with medical appointments every day. Tomorrow begins a month-long schedule free of clinic, hospital, and doctor appointments. Tonight I made a simple and healthy meal; salad and sweet potatoes with tahini sauce. This recipe calls for simple ingredients and simple steps to give sweet potatoes a delicious new flavour.

I discovered tahini while using one of my favourite food websites: The Mediterranean Dish with Suzy Karadsheh. Tahini is a Middle Eastern spice commonly used in regional dishes. This healthy sauce is made by grinding roasted, shelled sesame seeds into a creamy sauce. This sauce is rich in monounsaturated and polyunsaturated fats, which are healthy fats that support heart health. It is also rich in calcium and magnesium. In this recipe, we combine tahini with maple syrup or honey. This combination is a great topping for roasted sweet potatoes.
