Throughout my journey of living life over cancer, I have been sharing new recipes with you to support us all in living a healthy life. Today, I tried a muffin recipe for the second time, which included almond flour, almond milk, flax seeds, blueberries, and other ingredients. The first time I made these muffins, they were delicious but fell apart into a tasty mess.
I was frustrated and thought maybe I was failing because of my cooking tendencies—those who prefer cooking to baking love switching ingredients, changing directions, and multitasking. “Measure twice, cut once” has been said to me several times in home economics class.
This afternoon, I decided to make these muffins a second time. I measured exactly, used the ingredients stated in the recipe, and did not multitask. When I took them out of the oven, they looked great. But!
When I took them out of the muffin pans, I got the same tasty blueberry mess. The second time was not the charm. I was planning to serve these muffins in a meeting I am having at my home, but I decided to pivot and serve this delicious mess over lemon Greek yogurt sprinkled with coconut sugar and cinnamon.
So, you will not receive a recipe tonight. Instead, you get a reminder that it is ok if things don't work out. When this happens, you have three choices. Persist, pivot, or concede. For now, I have pivoted. Later, I will continue sharing this recipe with the real Betty Crocker in our neighbourhood to see if she can pull it off. While I wait, I am closing the book on this recipe until I hear of an easy, miraculous way to make these muffins stick.
Until then, I have a lot of Blueberry Flaxseed Bumble Berry Mix to enjoy!
