Fall in love with the simple things, one pumpkin muffin at a time.

Autumn always draws me back into the kitchen, especially when pumpkin is in season. Whether it’s pumpkin cheesecake or fresh muffins, I really enjoy the cozy flavours of cinnamon, nutmeg, and maple syrup.

I’ll admit, cooking has always come more naturally to me than baking. I like trying out new flavours when I cook, but baking has been more of a learning experience. Still, I’m really enjoying experimenting and trying new ways to make recipes gut-healthy.

In the past few weeks, I’ve been working on a pumpkin muffin recipe and tweaking it as I go. I wanted to make a tasty, healthier muffin with whole wheat flour, pure maple syrup instead of sugar, Greek yogurt, and olive oil.

After a few tries, I think I’ve finally got it just right!

Adding a bit more maple syrup, extra cinnamon and nutmeg, and cutting back on the baking soda really helped. The last batch turned out moist, full of flavour, and didn’t have that metallic taste I noticed before.

I also mixed in some crushed walnuts, pumpkin seeds, and dried cranberries for extra texture and flavour.

What better way to celebrate a baking success than by sharing it with others?

I was happy to bring my friends some fresh muffins to welcome them home after their trip. Sometimes, a homemade treat is the perfect way to say, "Welcome home!"

A Little Reflection

Healthy eating doesn’t have to mean giving up your favourite foods. It can be about trying new ingredients, making thoughtful choices, and finding a balance between nutrition and enjoyment.

After all, taking care of yourself matters, and sharing some of your baked goods matters too.
