I celebrated the 16th day of countdown to Christmas, joining in a Christmas murder mystery, participating in Christmas sing-alongs, and making my favourite recipe for family and friends. One of the soups I love to make for others is Chicken Lasagna soup. This recipe was introduced to me by a dear friend's sister who made this soup while visiting Florida. This is a delicious and nutritious soup that you can serve as a main course with your favorite bread. My son and his partner love this soup and put it on Mom's best meals wish list.
This recipe is based on Tieghan Gerard's recipe on her online site, Half Baked Harvest. This is a great website with recipes that are easy to make, healthy, and delicious. I made a few modifications to her recipe, changing the flour, using whole wheat pasta, and eliminating the prosciutto. Stick with my changes or add some of your own and join my family and friends who have added this recipe to their favorites list. This is chicken soup for the soul.
