Tomato Soup with a Greek Twist

This weekend, I was busy preparing meals for birthday celebrations and for someone recovering from surgery, including comfort food. In the midst of marinating chicken and making a Dubai chocolate cake, I decided to make one of my favourite food groups: Greek food.
Anything made with oregano, olive oil, feta cheese, garlic, and tomatoes always feels like comfort to me. Simple, nourishing, colourful, and full of flavour, it always satisfies. This time, I added oregano I brought back from Greece, but any fresh or dried oregano will do. This humble herb brings warmth, depth, and a bit of Mediterranean taste to the soup.
While the chicken marinated and I prepared dessert, I whipped up this comforting roasted tomato soup. Farm season in Nova Scotia is coming. We will soon have an abundance of local tomatoes to enjoy. While we wait for those sun-ripened Nova Scotia tomatoes, you can visit your local grocer or market, pick some up, and begin with what is available today.
First, place the tomatoes, onion, red pepper, two sprigs of rosemary, garlic and a block of feta. Each ingredient brings its own goodness to the bowl. Once baked, transfer these ingredients to a blender and add oregano and vegetable stock. Blend until smooth.
Tomatoes are rich in vitamin C, potassium, and lycopene, which gives them their red colour. Onion adds depth of flavour and contains plant compounds that support wellness. Red pepper adds sweetness, colour, and vitamin C. Garlic offers bold flavour and useful plant compounds. Rosemary adds an earthy fragrance and antioxidants. Oregano brings Mediterranean warmth, making simple food special. Feta cheese adds creaminess, tang, and salty richness, making this roasted soup comforting and satisfying.
The main utensils you need are a roasting pan and a blender. I love roasting vegetables because it brings out their natural sweetness, enhances the flavours, softens the feta, and fills the kitchen with a comforting aroma, all with remarkable ease.
Grab some tomatoes, a block of feta, and a roasting pan. Begin your day by making a healthy lunch or a starter for supper. Sometimes the simplest foods nourish us the most.
