"Delicious and Easy Fish Friday Recipe"

“A fish only begins to realize its potential the moment you throw it in deep water.” Matshona Dhilwayo

Friday in our house was always Fish Friday. My mother was an excellent cook, but fish was not her specialty. Sorry, Mom, but boiled cod is not one of my childhood favourites.

One of the joys of being married to a fisherman’s son is getting to enjoy the best, freshest shellfish and fish! What's more, when visiting his home in Cheticamp there was always an abundance of snow crabs and lobsters.

Fish is part of a healthy diet. Fish is rich in omega-3 fatty acids, which provide energy to our cells, reduce the risk of blood clotting and reduce inflammation. They also contain vitamins D and B2. It is rich in calcium and a great source of minerals such as iron, zinc, iodine, magnesium and potassium. Fish is so good for your heart that the American Heart Association recommends eating it at least twice a week.

Ray has taken the lead from his mom and is a great chef when it comes to fish. While in Antigua, we had available warm water fish; mahi mahi, red snapper, and wahoo. Ray made healthy and delicious recipes with equally corresponding tasty sides. This fish recipe with turmeric basmati rice was my favourite.

Download the recipe to prepare it for your own Fish Friday. I promise those who join you will have wonderful memories of this dish.
