"Switching Up a Summer Pasta Recipe for Good Health"

"Good food is very often, even most often, simple food." — Anthony Bourdain.

Happiness is eating good food with friends. It also means having friends who switch up one of your recipes, making it a healthier version. Over the years, I have shared my mother-in-law's favourite summertime salad with many people. It is a simple salad and is loved by all.

Summertime means sunny days, chill nights, good company, and potlucks. This pasta salad feeds many people, is made with natural foods, and is a great leftover. It includes tomatoes, cucumbers, onions, green peppers, and a tasty sauce of olive oil, vinegar, honey, ketchup, pepper, salt, and paprika. We replaced processed sugar with honey, decreased the amount of oil, and used organic wheat pasta and/or gluten-free pasta.

I made the pasta with her changes, and my husband gave it a thumbs-up. I love it when past favourites can be altered to ensure they are made with non-processed ingredients. This recipe will continue to be one of our favourites at home or bring to summer potlucks.

Try this recipe at home as you prepare for your upcoming summer events. I promise it tastes as good or even better than the former version. Healthy, tasty, and easy are combinations we all love. Go ahead and give it a try. Let me know if this will become one of your summertime staples.
