"Switching Up a Summer Pasta Recipe for Good Health"


"Good food is very often, even most often, simple food." — Anthony Bourdain.


Happiness is eating good food with friends. It also means having friends who switch up one of your recipes, making it a healthier version. Over the years, I have shared my mother-in-law's favourite summertime salad with many people. It is a simple salad and is loved by all.


Summertime means sunny days, chill nights, good company, and potlucks. This pasta salad feeds many people, is made with natural foods, and is a great leftover. It includes tomatoes, cucumbers, onions, green peppers, and a tasty sauce of olive oil, vinegar, honey, ketchup, pepper, salt, and paprika. We replaced processed sugar with honey, decreased the amount of oil, and used organic wheat pasta and/or gluten-free pasta.


I made the pasta with her changes, and my husband gave it a thumbs-up. I love it when past favourites can be altered to ensure they are made with non-processed ingredients. This recipe will continue to be one of our favourites at home or bring to summer potlucks.
