We have been serving some sweet happiness in Antigua with our creative take on fruit, Costco snacks, and balsamic vinegar. If you grew up like me, there was always dessert after the meal. Even though I'm eating healthier, that doesn't mean I can't have dessert. Dessert helps me end a meal during the day and keeps me from craving snacks in the evening.
My friend Janet is on vacation with us. She's Betty Crocker and I'm Betty Chef. During this time, she made her famous strawberry salsa. She made her whole wheat nachos with olive oil, cinnamon and cane sugar. For added variety, she came up with the dessert above that we loved.
This dessert has all the goodness of strawberries, whole wheat, olive oil, dark chocolate, coconut, and balsamic vinegar. Balsamic vinegar gives it a sweet and spicy flavour. Nachos can be eaten with the dessert or used to mop up all the delicious taste on your plate.
The beauty of this dessert is its simplicity and the possibility of substituting pears, apples and/or other fruits for the strawberries. Enjoy preparing this dessert for family and friends. They will be grateful for the sweet happiness you create!
P.S. The wine is a non-alcoholic red called FRE (California Cabernet Sauvignon). I bought it in Antigua, but Upside Drinks also has it.
